Today was tomato sauce making day! I am overwhelmed with tomatoes and I want to make my own sauce to freeze and use later. I found a great recipe here for making slow roasted tomato sauce. One is oven roasted and the other is slow roasted in a crock pot.
I tried the crock pot version first and the flavor is incredible! I cannot even describe how wonderful it smelled. Because it is cool and damp today I decided to make the oven roasted version. I cut up about 5 lbs of tomatoes and threw them into a large roasting pan and followed (mostly) the recipe. I used fresh basil, rosemary, oregano and some dried thyme. I rough chopped half of a very large sweet onion and smashed up 5 cloves of garlic.
I roasted them at 275 degrees for about 4 hours. As soon as they smelled “done”, I pulled them out of the oven. After cooling for a bit, I processed with my immersion blender and pureed everything into a smooth, rich sauce. It is sooooo good!
There are a lot more tomatoes that I am hoping will ripen before the first frost. I am going to be a sauce making fool!
